Today, I am sharing a great tasting recipe for macaroni cheese with chorizo and vegetables. Packed with calcium thanks to the full fat milk and cheese, your little one will get plenty of goodness (I assume!). This is a relatively new recipe for our family mealtimes, but is becoming a firm favourite. It’s a little bit of a faff to make the cheese sauce, but is well worth it in the end. Check out the mac and cheese recipe below.

Instructions
Cheese Sauce
  1. Slowly melt the butter in a saucepan.
  2. One the butter has melted, gradually add the flour whilst stirring to form a roux. Once all the flour has been mixed with the butter, leave on a low heat for a couple of minutes.
  3. Slowly add the milk to the roux whilst stirring to form the sauce. Leave on a low heat for 10-15 minutes and stir regularly until the sauce has thickened.
  4. Add three quarters of the grated cheese and mix into the sauce. Stir until the cheese has melted.
Macaroni
  1. Put the macaroni into another saucepan, cover with boiling water and simmer for 10 minutes.
  2. Add the frozen vegetables to the pan and boil for a further 2 minutes.
  3. Drain and place into an oven proof dish.
  4. Put the chorizo and onion into a frying pan. Cook for a few minutes until the onion is soft and the chorizo is crisp.
  5. Add the cooked chorizo and onion to the macaroni in the oven proof dish.
  6. Pour the cheese sauce over the macaroni and mix together.
  7. Sprinkle the rest of the cheese over the macaroni and cheese sauce.
  8. Place in a pre-heated oven (180 degrees Celsius) for 5-10 minutes until the cheese has melted. Serve.
  9. Eat and enjoy!
Recipe Notes

Why not replace the chorizo with bacon lardons for alternative porky goodness?

Add additional veg - mushroom, pepper, spring onion etc - to up your vegetable intake.

Mix in smoked paprika to give your mac and cheese a BBQ twist.
