The recipe I’m sharing today is Chili Con Carne (with rice and/or tortilla chips) prepared in the slow cooker. Since buying our Morphy Richards Accents Slow Cooker last year, we’ve started eating healthier, have saved money when doing the food shopping and spend less time in the kitchen.

With less than 10 mins preparation time required, this recipe is simply a case of sticking everything into the slow cooker and letting it do it’s job. The result is a tasty and healthy chili con carne – with a slight kick – for the whole family to enjoy together.

Instructions
  1. Peel and dice the onion. De-seed and chop the pepper. Add to the slow cooker cooking pot.
  2. Add the minced beef to the cooking pot.
  3. Add the garlic powder, chilli powder and smoked paprika to the cooking pot.
  4. Add the tinned tomatoes, tomato puree, brown sugar and plain flour. Stir well.
  5. Cover the cooking pot with the lid and cook for 5 hours on low.
  6. Add the mixed veg and drained kidney beans. Stir well. Place the lid back on the pot and cook for another 2 hours on low.
  7. Serve the chilli with white rice (cooked in a separate pan for 15 minutes), on top of tortilla chips, or a combination of the two. Top with cheese.
  8. Eat and enjoy!
Recipe Notes

For something a little chunkier, why not substitute minced beef for diced beef or beef strips?

Experiment with the amount of chilli powder / smoked paprika you add if your little one isn't too keen on spicy food.

Tangy Cheese Doritos are THE BEST choice for the tortilla chips.
